Light Banana Cake With Chocolate Sauce
Bananas are one of the most popular fruits in the world. You may think bananas are only for breakfast, but they make great desserts. "The Boston Cooking School Cook Book," first published in 1896, contains a recipe for banana cake. The recipe hasn't changed in the passing years, but the availability of nutritional information has changed.
According to the Produce Oasis Web site, one medium banana contains 110 calories, no fat, no cholesterol, no sodium, 29 grams of carbohydrate, 4 grams of fiber, 400 milligrams of potassium, 21 grams of sugar, and 1 gram of protein.
Potassium and sugar make bananas a "perfect runner's food," according to the Devine Sports Web site. "Eating a banana in midrace is always a good strategy to avoid bonking in the final miles," the site says. If you get leg or foot cramps try eating a banana.
Bananas are good for you. The Pediatric Oncall Web site lists the vitamins and minerals in bananas: 17 milligrams of calcium, 36 milligrams of phosphorous, .9 milligrams of iron, 7 milligrams of vitamin C, and a small amount of vitamin B complex. Good as bananas are, they can ripen quickly. What can you do with over-ripe fruit?
You can make light banana cake, an adaptation of the old-fashioned recipe. Sugar-free applesauce replaces some of the butter and Splenda blend replaces some of the sugar. This is a delicious snack cake warm from the oven. For a snazzy dessert, serve the cake with whipped topping, chocolate syrup and toasted nuts.
Ingredients
1 3/4 cups regular flour (presifted)
1 teaspoon baking soda
1/2 teaspoon lower sodium salt
2/3 cup mashed, ripe bananas
1/4 cup sugar-free applesauce
1 teaspoon pure vanilla extract
3 tablespoons soft butter
1/2 cup fat-free sour cream
1 1/2 cups Splenda blend
2 large eggs
8-ounce carton "free" whipped topping
Sugar-free chocolate syrup
Method
Preheat oven to 350 degrees. Coat a 10-inch glass pie plate with cooking spray and set aside.
In a medium bowl combine flour, baking soda, and salt. In a small bowl combine mashed bananas, applesauce, and vanilla.
Cream butter, Splenda blend, and sour cream in small mixer bowl. Add eggs, one at a time, and beat well. Alternately add dry and wet ingredients to batter. Pour batter into pie plate and bake for 28 minutes, or until the top is golden. Cool on rack.
Slice cake. Top each slice with whipped topping. Drizzle chocolate syrup over cake and garnish with toasted almonds or walnuts. Makes 12 servings.

Baking a Cake From Scratch
Baking a cake from scratch is not difficult.
I have several recipe books and use from several that I have had over 20 years.
To start you want your pans prepared. Grease and flour the pans. Usually I like to make a 2 layer cake that is made with 2 9" round pans.
Let me use a recipe I really like. My husband enjoys chocolate cake but some family members aren't big on chocolate so here is a banana cake recipe.
Baking a cake from scratch can be just as easy as a mix. You just want to make sure you have all your ingredients before you start. Take inventory and read the ingredients. Read your recipe through because once in awhile I will notice that they ask for something that isn't on the ingredients list. Then you have to substitute or make a quick run to the store.
Our banana cake recipe starts with creaming the shortening and sugar together. It calls for 3/4 cup shortening and 1 and 1/2 cups sugar. Shortening should be soft (you can use butter or margarine, a stick of margarine is 1/2 cup so you would use 1 and 1/2 sticks) and mix the sugar with it on low speed with an electric hand mixer.
As we continue baking a cake from scratch we will add 1 cup (about 3 bananas) of mashed bananas to the shortening mix, then add 1/2 cup milk, 2 eggs and 1 teaspoon of vanilla, Mix these all together with your electric mixer on medium speed until everything is mixed and creamy.
I will then just add the 2 cups of flour, 1 teaspoon of baking soda, and 1 teaspoon of baking powder plus 1/4 teaspoon of salt. I add one on top of the other and then just mix it all in at one time. Start the electric mixer on slow and gradually get it to high as it mixes.
When you have a smooth mix you are ready to pour it into the prepared pans. Pour some into each pan and get them where they are almost equal. Now I will take and just give each pan two hard taps on the counter to remove air bubbles. Just grab the top with both hands for this. At this point they are ready to bake.
Bake the cake at 350 degrees for about 25 minutes a put a knife in the center. If the knife comes out clean the cake should be done. I don't like to over bake a cake as it dries it out.
Now that you know how easy baking a cake from scratch is you can add a nice butter cream frosting and have a delicious cake that you can decorate.
Think of how many orders you could get for homemade cake and beautifully decorated too.

Banana Bread - Low-Carb Recipe
Banana Bread - Low Carb
1 cup butter
1 cup Splenda
5 eggs
1 tsp baking powder
2 tsp banana extract
2 cups almond meal -- flour
Instructions:
1) Cream butter and Splenda.
2) Add eggs one at a time beating after each egg.
3) Mix flour with baking powder and add egg mixture a little at a time while beating.
4) Add extract. Pour into a small loaf pan.
5) Bake at 350 degrees for 35-45 minutes.
6) Check with toothpick at 35 minutes.
Per Serving: 259 Calories

Banana Cinnamon Swirl Bread - Low-Carb
Serving Size: 8
6 egg yolks
6 egg whites
1/2 tsp cream of tartar
2 tbl Splenda
1/3 cup Atkins Bake Mix, or soy flour
2 tbl Splenda
1-1/2 tsp banana extract
1 tsp vanilla
1 tbl chopped peanuts, finely chopped
1-1/2 tsp Splenda
1-1/2 tsp cinnamon
Instructions:
1) Separate the eggs, put the whites in a large mixer bowl with the cream of tartar and 2 tbl Splenda.
2) Whip the whites until stiff, but not dry peaks form. Set aside.
3) In a seperate bowl, beat the yolks with the remaining 2 tbl Splenda and the extracts.
4) Stir in the bake mix and the nuts.
5) Add a heaping ladle of whites to the yolk/bake mix mixture, stir until well blended and a fairly thin batter.
6) Pour this batter into the whites and gently fold in until well combined. Be careful not to break down the volume of the whites.
7) Spray a loaf pan and spoon in 1/2 the batter; sprinkle on 1/2 the splenda/cinnamon mix.
8) Spoon the rest of the batter on top, sprinkle on the remainer of the Splenda/cinnamon.
9) Place in a preheated 350°F (180°C) oven and bake for about 28 minutes.
10) Cool almost completely in the pan, remove and finish cooling on a rack.
11) Slice into 8 slices and store in a covered container in the fridge. Separate the slices with wax paper.
Per Serving: 69 Calories

How To Make Low GI Banana Bread
As far as low gi banana bread recipes go, this one is my favorite. It is the perfect snack for those early evening cravings and it also goes great with a cup of tea or a cold glass of milk. You can spread a slice with a small amount of non-hydrogenated margarine, but I find a warm slice of this bread is excellent on its own.
Ingredients
1 1/2 cups whole wheat flour
3/4 cup ground flaxseed
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
3 very ripe, medium bananas, mashed
6 tbsp SPLENDA® brown sugar blend
3/4 tbsp lemon juice plus enough skim milk to make 3/4 cup (or use 3/4 cup buttermilk)
4 egg whites
1 tsp vanilla
3/4 cup chopped walnuts
Directions
Preheat oven to 350 degrees. Spray loaf pan with non-stick spray. Measure 1 tbsp lemon juice (freshly squeezed is best) into a measuring cup and pour in skim milk for a total of one cup. Do not stir. Allow to sit for 5 minutes. Alternatively, you can simply use 1 cup of buttermilk if you have this ingredient on hand.
In a large bowl, blend flour, flaxseed, baking powder, baking soda, cinnamon and salt and set aside.
Beat egg whites and sugar. Add bananas and vanilla and beat lightly.
Pour wet ingredients into dry ingredients and combine until well mixed. Add walnuts and stir until combined.
Pour mixture into loaf pan and bake 40 to 50 minutes.

The Japanese Banana Diet - Does it Really Work?
The Japanese Banana Diet was been getting a lot of press lately, some good and some bad. In this article I want to discuss the Banana diet and tell you about my personal experiences of using this diet.
The Japanese Banana Diet
The first thing that you have to realize is that this diet is not for everyone. In fact, I feel that I should go ahead and tell you up front that based on my personal experience, the effectiveness of this diet really tops out at around 15 pounds. However, if you are looking to lose weight quickly then the Japanese banana diet may be just what you need.
The first thing that you need to do is eat 2 bananas before eating breakfast. In fact, many people simply substitute bananas for their current breakfast. It is suggested that you drink either water or some form of natural fruit juice (typically apple or orange juice) while on the banana diet. Do not drink soda.
You can go ahead and eat lunch as normal, except try to stop yourself when you are about 80% satisfied. It takes a few minutes for the stomach to tell the brain it is satisfied, but traditionally if you only eat 80% of what you normally eat at lunch time you will be fine according to the diet.
When dinner time comes, you must eat 2 bananas right before dinner. These 2 bananas will contain a combined estimated 180-200 calories, which means you will not be as hungry at dinner. You can follow up your bananas with some form of rice, as this is popular in Japan.
The Japanese banana diet is really all about portion control. If you can learn to eat 3-5 bananas per day before meals, and also eat smaller meals then you are on the fast track to weight loss.
The Japanese Banana diet works well, but honestly it is not what helped me lose over 60 pounds safely in just a few months. Do you want to see what did help me lose all that weight?

Toaster Oven Baked Banana Crumble Topped With Vanilla Ice Cream
Here's a simple toaster oven baked banana recipe for your guilty pleasures. You can find these ingredients from any major supermarkets.
What you need for this baked banana recipe:
4 ripe bananas, peeled
1 cup flour
3/4 cup brown sugar
3/4 cup orange juice

How to Make Delicious Desserts Using Fresh Fruits - Dazzling Peach Trifle and Gelatin Banana Split
The only thing better than fresh fruits are desserts made with those same fresh fruits. Try these delicious fruit desserts to rave reviews from family and friends. Gelatin Banana Split Desserts use fresh strawberries, bananas, pineapple along with maraschino cherries. This is a great summertime dessert, although it is also perfect year-round. This makes a very pretty dessert for parties, even holidays. The Peach Trifle is not only a delicious dessert, it makes a gorgeous presentation. Both of these recipes have eye appeal.
GELATIN BANANA SPLIT DESSERT
1 1/2 cups boiling water
1 pkg (8 serving size) strawberry OR cherry gelatin
2 cups cold water
1 pint vanilla ice cream, softened
frozen whipped topping, thawed
sliced bananas
sliced strawberries
pineapple chunks (if using canned, drain very well)
Chopped pecans
halved maraschino cherries, if desired
In a large bowl, place the dry gelatin and add the boiling water. Stir two minutes to be sure all the gelatin is dissolved. Stir in the cold water. Add the ice cream and stir until smooth. Pour into a serving bowl leaving room for the toppings later. Refrigerate at least 3 hours or until firm. Before serving, top with the fruits. Pile whipped topping in the center and sprinkle with chopped nuts. Top with some halved maraschino cherries, if desired.
DAZZLING PEACH TRIFLE
1 box (16-oz) Angel food cake mix
1 tbsp chopped crystallized ginger
1/4 cup confectioners' sugar, divided
3/4 cup peach preserves
1 quart peach slices
1 pint blueberries
1 tbsp lemon juice
2 cups heavy cream
1/2 cup prepared lemon curd
Preheat oven to 350 degrees. Prepare the cake batter by preparing the mix according to package directions then stir in the crystallized ginger. Line a jelly roll pan, 11 x 17-inches, with parchment paper. Pour batter into the pan. Bake at 350 degrees for 18 minutes or until a wooden toothpick inserted in the center comes out clean. Let cake cool for 10 minutes. Sprinkle 1 tablespoon of the confectioners' sugar and remove the parchment paper. Cut cake lengthwise into 3 equal pieces. Starting with the long side, tightly roll each piece in paper towel. Let cool completely. Unroll cakes and spread each piece with 1/4 cup of the peach preserves. Re-roll the cakes. Cut each roll into 12 slices.
In a bowl, combine the peach slices, blueberries, lemon juice, and 1 tablespoon confectioners' sugar; toss gently to coat.
In medium bowl of electric mixer, beat on high speed the heavy cream and remaining confectioners' sugar. Beat for 2 minutes or until stiff peaks form. Fold in the lemon curd.
To assemble: Place 12 cake slices, spiral side out, along bottom of trifle bowl. Arrange Arrange peach slices above each cake slice. Add another layer of cake spirals above peaches. Place remaining cake slices in the center of bowl. Spoon the blueberries around the cake slices and peaches. Top the berries with the whipped cream mixture. Add a couple of peach slices to the top along with a sprig of fresh mint as garnish, if desired.

Banana Bread Is So Easy See Amaryllis Of Hawaii Loves To Cook By Marilyn Jansen
Amaryllis starts with seven ripe bananas mashed into a bowl. She sifts flour, baking soda, cinnamon and salt into a bowl. She creams together butter and sugar, adds a 1/4 cup of honey and a tsp. of vanilla to the butter mixture, then adds the lightly beaten eggs. She combines the wet and dry ingredients and adds a cup of chopped walnuts, a cup of raisins stirred in at the end, and pours the batter into 2 oiled loaf pans, or several mini loaf pans to bake at 350 degrees 45-60 minutes until done! Sometimes she adds yogurt or 1/2 cup sour cream to the mixture. Many quick breads, like pumpkin bread and zucchini bread, are done this way. It's so easy!
7 ripe mashed bananas
2 & 1/2 cups flour
2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
2 sticks butter at room temperature
1 & 1/2 cups sugar
1/4 cup honey
4 eggs, lightly beaten
1 tsp. vanilla
1 cup crushed walnuts
1 cup raisins
Banana Pancakes
Anyone can make beautiful banana pancakes.
Use fresh flour and baking powder. Sift dry ingredients.
1 & 1/2 cups flour
1 cup milk
3 tbsp. sugar
1 tsp. vanilla
2 tsp. baking powder
2 bananas, sliced
1 tsp. salt
2 eggs
Mix wet into dry ingredients just until blended. Add bananas and ladle onto a hot oiled griddle or pan. You know it's hot enough when a drop of water bounces off the pan.
Let bubbles appear on the pancakes before you flip them.
Drizzle with syrup and dust with powdered sugar.
Try blueberries, apples, peaches, or mango in pancakes or wrapped in crepes!
Basic crepe batter
2 eggs
1/2 cup flour
2/3 cup milk
1/4 tsp. salt
1 tbsp. oil
Lightly beat the eggs, stir in milk & oil, gradually stir in flour and salt. Beat until smooth. Cover and refrigerate 2 hours.
Brush a 7-inch crepe pan with oil and heat until hot. Stir batter, add scant 2 tbsp. batter to pan & quickly tilt to cover bottom of pan. Cook crepe, turning over until lightly browned on both sides. Makes 12

What To Do With Those Overripe Bananas
What to do with those overripe bananas that are too ripe to eat? When your bananas have more black spots then yellow. When the stems look like a ripcord, just about to rip. Why not make Banana Nut Cookies.
This morning as I strolled into the kitchen I noticed the bananas on the kitchen counter were turning black spotted. My first thought was to make banana bread. But then I realized this was a perfect opportunity to create a new cookie recipe.
Throwing caution to the wind I started to create a cookie recipe out of my tried and true banana nut bread recipe. I added a few more ingredients and added to some ingredients and subtracted from some ingredients. Then I began baking. The first batch came out shaped like cookies, but was fluffy like cake. They tasted pretty much like banana nut bread. Not bad, but not what I was trying to create. I then added more butter and sugar to make them a little crisper and sweeter. What makes a good cookie into a great cookie? Chocolate chips. I added a bag of quality chocolate chips. Quality is the key word here; the quality of your chocolate chips can either make or break a good cookie. This batch was good but needed some extra texture. I didn't want to create a cake cookie. I wanted to create a cookie. The next batch I added coconut and oats. Wow, what a difference! The coconut and oats not only added texture, but added crispiness and chewiness too.
What was that old saying? Something like, "when life give you lemons make lemon aid." In other words, when life gives you overripe bananas make banana nut chocolate chip cookies. Any time you have fruit taking the southern route there is always a recipe, let me say a cookie recipe to create.
Cream together:
2-cups butter
1-cup sugar
1-cup packed brown sugar
2-eggs
3-bananas
½-cup sour cream
After the above ingredients are thoroughly mixed together, mix in:
1½-tsp. baking soda
1-tsp. baking powder
½-tsp. salt
4-cups flour
Mix all these ingredients together well. Now I'll give you some options to add, but you will need to add at least some of these ingredients if not all of them. When baking cookies everyone has their individual tastes. It is always advisable to make a new cookie recipe your own. Add things you like and subtract things you don't. Who knows your cookie may turn out better than the original recipe.
1-cup nuts
1-11.5 oz. bag of chocolate chips
1-cup coconut
1-cup of quick oats

The Connection Between Banana and Bodybuilding
If you are a gym buff, then you have probably heard that you should eat a banana before and after your work out. Yes, it's true! A banana is a very important food for body builders and most of them do eat banana before and after their gym session. But what's in the fruit? Is it because of its protein content? Protein is very essential in building muscles because it helps in muscular repair after an intense workout. Or is it because of the potassium? We all know that banana is very rich in potassium. Well, to know the truth, let's see how much protein and potassium the banana contains.
The facts:
In an average sized banana, there would be about 400 mg of potassium and around 1 gram of protein. Now let us analyze if the protein content in a banana is sufficient enough to provide the protein needs of a bodybuilder post workout. According to studies, an average man needs 2 grams of protein/kg of body weight, and for athletes and bodybuilders, the requirement would be 3-4 gm protein/ kg of body weight. Considering the facts mentioned, we can safely conclude that eating banana after a workout has nothing to do about protein. Bananas are good source of potassium. 400 grams of potassium is actually 10 percent of the recommended potassium intake daily for the average man.
Electrolyte is lost during intense activities like in working out and potassium is one of those electrolytes. So eating a banana prior will help prevent too much potassium loss and eating one after workout replenish the potassium lost by the body. It will also prevent dehydration, muscular cramps and weakness which are common during excessive electrolyte loss.
So, there you go! Banana is important for bodybuilders because of its potassium content and not for its protein. To effectively improve your physique, eating a combination of banana and high protein foods like eggs, nuts and chicken breasts is the best thing to do.

Smoking Banana Peels - How True is It?
Have you heard of the phrase smoking banana peels? When you try researching the term, another term comes up which is bananadine. Apparently, an urban legend about smoking banana peels was the reason why the word bananadine was coined. Wikipedia defines bananadine as "a fictional psychoactive substance which is allegedly extracted from banana peels."
It sounds really weird to actually smoke using banana peels. This fictitious activity started when a recipe on extraction of bananadine from banana peels was published in Berkeley Barb, which was an underground newspaper. Max Scherr, the founder and editor, published a satirical story about a bananadine-induced psychedelic high. According to him, the high is just like that of opium and psilocybin. The story gained popularity after two significant events. It got published in The Anarchist Cookbook by William Powell and people related it to a hit single titled "Mellow Yellow." What started as a hoax is now considered to be true by people!
The Food and Drug Administration (FDA) conducted a study on bananadine after a New York Times article stated, that "banana scrapings, provide-if anything-a mild psychedelic experience." The FDA study concluded otherwise. To support the findings of the FDA, researchers at New York University found that banana peels do not contain intoxicating chemicals. According to them, smoking banana peels merely created a placebo effect. That is, the psychedelic high is only a result of the person's perception of how it works.
Studies prove that the hoax has no grain of truth to it. It was fictional and an urban legend, nothing more. But still, some people have the opposite opinion. Others even went as far as posting a recipe in the Web! Is smoking banana peels real or not? Why would you even bother? Smoking is not a good habit. And if you smoke to get high, that is even worse. Quit smoking now! Make the right choice!

Easy Banana Walnut Muffin Recipe
Here's a tip for chopping nuts, such as walnuts, in a food processor:
The first step is to pulse walnuts 1 cup at a time, with the shells removed of course, on chop four or five times. Then turn the food processor off and scrape the jar with a spatula. Return the chopped nuts to the food processing jar and pulse on chop two or three more times. If you like more coarsely chopped nuts, don't pulse them as many times or for as long. For best results, do not exceed 1 cup at a time in your food processor.
Now on to my favorite banana walnut muffin recipe!
Ingredients:
1 cup all-purpose flour
1/4 cup sugar
1-1/2 teaspoons baking powder
1/4 teaspoon cinnamon
1/8 teaspoon salt
1 small ripe banana, peeled and cut into 1-inch pieces
(The riper the banana, the sweeter it will be.)
1 large egg
1/4 cup skim milk
1/4 cup vegetable oil
1/2 to 1 cup shelled walnuts
1 teaspoon sugar
Preheat oven to 375ºF and line six muffin cups with paper liners, or grease muffin pan. Combine flour, sugar, baking powder, cinnamon and salt in a small bowl and put aside Place banana pieces in the food processor. Chop until smooth, usually 20-30 seconds. Scrape the food processor bowl with a spatula. Add egg, milk and oil and process until combined, about 10 seconds. Then add the walnuts and dry ingredients. Pulse in food processor until flour is just mixed in, about 3 - 4 times. (It's okay if the batter is lumpy and still has some dry flour may be left on top.
Fill prepared muffin cups almost to the top with batter and sprinkle tops with sugar. Bake until tops are lightly browned and a toothpick inserted in the center comes out clean, about 20 - 25 minutes. Remove from muffin pan and cool on wire rack. Makes six delicious muffins.
